Erin Nicole Baker Roberts, age 33, of Asheville, NC, only child and beloved daughter of Joseph M. Baker and Judith M. Baker of Bluffton, SC, died Saturday, December 15, 2018 at her residence. Erin gifted this world with her beautiful daughter Josie, who was her pride and joy, and always called Josie “the best thing in her life”. Erin was a wonderful mother to Josie. No one had a bigger, more loving heart than Erin. Erin was born in Plano, TX and grew up primarily in Roswell, GA and Hilton Head Island, SC. After graduating high school from Auldern Academy and attending the University of South Carolina, she moved to Asheville and attended AB Tech. Erin was a talented flutist, enjoyed writing, music, snowboarding, her car and most of all her cats and dogs which were near and dear to her. Erin’s body was her canvas for creativity and self expression. Erin’s idea of a great evening was going up to the Blue Ridge Parkway to watch meteor showers. Erin was also known as “Nicki Baker” to some and used the name in many of her business and marketing ventures. She was very proud of her success with the Younique Cosmetics Company and received numerous accolades and awards for her accomplishments. In addition to her daughter and parents, Erin is survived by her husband, Eric D. Roberts of Asheville, NC; grandfather, William A. Nichols of Oshawa, Ont.; aunts and uncles, Fay and Alex Lyttle of Pickering, Ont. and Carol (Lynne) and Tony Malcolm of Welland, Ont.; and cousins, Joe Barron and Travis Barron of Collingwood, Ont., and Brian Barron of Beamsville, Ont. Erin was preceded in death by her paternal grandparents, James and Dorothy Baker of Toronto, Ont., and maternal grandmother, Irene Nichols of Peterborough, Ont. In honor of Erin’s love for animals and her admiration for the Palmetto Animal League’s mission, please consider donating in her name at www.palmettoanimalleague.org. Arrangements are by Groce Funeral and Crematory in Asheville, NC and a private service will be held at a later date under the direction of Sauls Funeral Home in Bluffton, SC. Words cannot describe how much Erin will be missed by those who knew and cared for her. May she have everlasting peace and serenity knowing she was truly loved.
